Chickpea-flax pancakes

I have been looking for a healthy and at the same time tasty recipe for a long time. I was interested in the combination of different and unusual flours. So I came to chickpea-flax pancakes. Why chickpeas and flax? Chickpeas are rich in protein, and flax not only has a large arsenal of useful vitamins, but also has a binding property. Very tasty, and most importantly, dietary pancakes.

Mix chickpea flour, flaxseed flour, salt, and stevia in a bowl.
- Chickpea flour: 250 g
- Flaxseed flour: 50 g
- Salt: 0.5 teaspoon
- Stevia extract: 0.3 teaspoon

In a separate bowl, pour in the egg and add half of the dry mixture obtained. Mix and add kefir with the second part of the dry ingredients. Knead the dough and let it rest for 15 minutes. Then add baking soda and pour in boiling water (to extinguish the soda). Mix the dough well again with a whisk. The consistency should be like kefir; adjust thickness with water.
- Chicken egg: 1 piece
- Chickpea flour: 250 g
- Flaxseed flour: 50 g
- Kefir: 400 ml
- Soda: 1 teaspoon
- Boiling water: 400 ml

Grease a heated pan with oil using a silicone brush. Cook the pancakes over medium heat. You can cover the pan with a lid while cooking, making it easier to remove the pancakes.

These pancakes pair wonderfully with yogurt, cottage cheese, berries, caviar, mmm... Enjoy your meal!
