Cut 2 slices of pancetta into small pieces, leaving 2 whole.
- Pancetta: 4 pieces

Cut the mushrooms into 4 pieces, slice the green onion stems diagonally, and cut the brie cheese into small cubes.
- Champignons: 50 g
- Green onions: 1 stem
- Brie cheese: 30 g

Preheat the oven to 200 °C and grease the inside of the cappuccino cup with a little olive oil.
- Olive oil: 1 tablespoon

Place two slices of pancetta in a baking dish and cook in the oven until golden and crispy. Leave to cool and slightly harden.
- Pancetta: 4 pieces

Heat olive oil in a medium-sized skillet and sauté mushrooms with chopped pancetta for about 5 minutes until golden brown.
- Olive oil: 1 tablespoon
- Champignons: 50 g
- Pancetta: 4 pieces

Add green onions, salt it, and cook for another 3 minutes, stirring constantly.
- Green onions: 1 stem
- Salt: to taste

Remove the pan from the heat and stir in half of the chopped cheese.
- Brie cheese: 30 g

Pour the mixture from the pan into a cappuccino cup, crack two eggs into the cup, keeping the yolks intact.
- Chicken egg: 2 pieces

Place the cup on the baking tray and bake uncovered for 5 minutes.

Take out of the oven, sprinkle with remaining cheese, put back in and bake for another 8 minutes.
- Brie cheese: 30 g

When ready, place two cooled slices of pancetta in the cup. Sprinkle the eggs with black pepper.
