Chickpea Omelette

The texture is really like an omelette. But you can achieve it without using eggs, just by mixing hemp, chickpea and oat flour.

In a bowl, mix flax seeds with ¼ cup of warm water and let sit for 5 minutes.
- Ground flax seeds: 1 tablespoon
- Water: 0.5 glass

Mix the baking powder and chickpea flour. Add oat flour, salt, spices, flaxseeds, and ¼ or more cup of water, and mix thoroughly.
- Baking powder: 0.5 teaspoon
- Chickpea flour: 0.3 glass
- Oat flour: 1 tablespoon
- Salt: 0.3 teaspoon
- Ground flax seeds: 1 tablespoon
- Water: 0.5 glass
- Ground dried garlic: to taste
- Turmeric: pinch
- Ground black pepper: 0.5 teaspoon

Add vegetables, jalapeños, greens as desired, and mix again.
- Spinach: 20 g

Heat the pan over medium heat and drizzle with oil.
- Water: 0.5 glass

Add the mixture to the pan and carefully spread it with a spatula.

Cover with a lid and cook for 7 minutes.

Remove the lid, add a few drops of oil to the edges of the omelet, and cook for another 5-7 minutes.
