Oatmeal pancakes made from flakes are a simple yet surprisingly delicious recipe of Russian cuisine. They have a tender texture and a light nutty flavor thanks to the oatmeal. The history of the dish goes back to ancient traditions when housewives tried to make the most of available ingredients. These pancakes are perfect for breakfast or a cozy family tea time. They can be served with jam, honey, sour cream, or condensed milk. For a heartier option — with pieces of baked meat or salted fish. Easy to prepare, they delight with their softness and aroma, and most importantly — warm you with their homey comfort.

1
Pour oats, sugar, and salt into a deep bowl. Add a lightly beaten egg, then milk. Mix with a fork and sour the mixture with lemon juice. Let it sit for 20 minutes.
- Oat flakes: 0.5 glass
- Salt: 0.5 teaspoon
- Chicken egg: 1 piece
- Milk: 2 glasss
2
Measure the required amount of flour and baking soda, and be sure to sift them together. Pour the flour into a bowl and mix with a fork without striving for a uniform consistency. The dough should be thick enough, like creamy sour cream. Then add olive oil to the dough - one or two tablespoons depending on the consistency, and mix again.
- Wheat flour: 0.1 glass
- Soda: 0.5 teaspoon
- Olive oil: 1 tablespoon
3
Heat vegetable oil well in the pan. If you're unsure if the oil is hot enough, drop a bit of batter in the center of the pan. If the batter browns quickly, it's time to start cooking pancakes.
- Olive oil: 1 tablespoon

Using a tablespoon, place 4 portions of the batter in the pan and quickly fry one side for about 1 minute. Then flip to the other side with a spatula, cover with a lid, and cook for a couple more minutes. Stack the finished pancakes on a large flat plate. To keep the pancakes hot until serving, place the serving plate over a pot of boiling water.
- Olive oil: 1 tablespoon

Serve pancakes hot with jam, preserves, sour cream, or condensed milk. Cold roasted meat pieces, salted fish, or red caviar can also be used as fillings.
