Egg nest is a refined dish of European cuisine that captivates with its airy texture and delicate flavor. Its history roots in breakfast traditions when eggs were used to create nutritious and beautiful dishes. The whipped egg white creates a base — like a cloud, with a golden yolk shining at its center. A light creamy hue is added by grated cheese, while bacon and crispy toast complement the composition with crunch and zest. This dish is perfect for a morning meal or light snack, creating a sense of homey comfort and gastronomic delight. Served hot, it surprises with the combination of airiness and rich flavor.

1
Preheat the oven to 200°C. Prepare a baking tray. Line it with parchment paper.
2
We take the eggs. It is necessary to separate the whites from the yolks. We collect the whites together. The yolks are placed in separate containers.
- Chicken egg: 2 pieces
3
Whip the egg whites with salt until stiff peaks form. About 1.5 - 2 minutes on high speed with a blender.
- Salt: to taste
4
Grate the cheese on a fine grater. Use a wooden spatula to gently fold the cheese into the egg white mixture in small portions.
- Cheese: 100 g
5
Place the resulting mass on a baking sheet. You should get two 'clouds'. Make a small indentation in the center of each. The yolk will go there later. The indentation can be easily made with an eggshell. Put the egg whites in the oven for 3 minutes.
- Chicken egg: 2 pieces
6
Remove the egg whites after 3 minutes, it's important not to overcook them. Pour the yolk into the indentation and put it back in the oven for another 3 minutes.
- Chicken egg: 2 pieces
7
While the eggs are in the oven, lightly fry the bacon. Then place it on the toast.
- Bacon: 100 g
- Toasts: 2 pieces
8
