First, beat the eggs separately into a foam, then add milk and paprika, and beat again, adding two pinches of salt and grated cheese (cheddar, parmesan, manchego, or any hard aged cheese).
- Chicken egg: 5 piece
- Milk: 200 ml
- Smoked paprika: 1 tablespoon
- Coarse salt: to taste
- Cheese: 50 g

Mix at a slow speed. If you want a thicker consistency, you can add a tablespoon of flour at this stage.

Preheat the oven to 180 degrees.

Drain the liquid from the can of beans and rinse the beans with water.
- Canned red beans: 1 jar

Sauté shallots cut into feathers in olive oil.
- Extra virgin olive oil: 2 tablespoons
- Shallots: 2 heads

After 3 minutes, add cherry tomatoes, cumin, coriander, and beans.
- Cherry tomatoes: 12 pieces
- Ground cumin (zira): 1 teaspoon
- Ground coriander: 1 teaspoon
- Canned red beans: 1 jar

Fry for about 5 minutes, stirring constantly, to leave as little liquid as possible without burning.

Pour in the egg mixture and fry for about 2 minutes until the edges of the pan show that the eggs are ready.

We place it in the oven (preferably using a pan that can go directly into the oven, for example, one with a removable handle) and bake for about 7-10 minutes or until golden brown.
