Eggs in tomato is a simple yet exquisite breakfast inspired by European cuisine. The combination of a tender egg baked inside a juicy, aromatic tomato creates a unique flavor: the slight acidity of the tomatoes perfectly complements the softness of the egg yolk. This dish embodies homey comfort and versatility—it can be enhanced with favorite ingredients like cheese, sausage, or herbs. The recipe's history traces back to the tradition of baking vegetables with eggs, characteristic of Mediterranean and Eastern European cooking. It is perfect for a hearty breakfast or light dinner, and its elegant presentation makes it appealing even for festive tables.

1
Cut off the top of the tomato and remove the seeds. Grease the inside with oil, add salt and pepper.
- Tomatoes: 4 pieces
2
Chop the sausages finely (you can use any ingredients you like). Carefully crack the egg, trying not to break the yolk. You can sprinkle cheese on top.
- Sausage: 100 g
- Chicken egg: 4 pieces
3
Place in a mold to prevent falling, bake in the oven at 200–220 degrees for 30 minutes.
