Cottage cheese pancakes with orange-apple sauce are a delicate and airy treat of Russian cuisine that combines the softness of cottage cheese with the refreshing tartness of fruit sauce. Historically, syrniki are a popular breakfast or dessert known for their simplicity and rich flavor. In this recipe, traditional syrniki are complemented by a fragrant sauce made from orange and apple, with hints of cinnamon and ginger that add a special zest to the dish. The golden crust of the syrniki, the light sweetness of vanilla sugar, and the rich fruity notes make them an ideal choice for a cozy family breakfast or light dessert. Serve them warm, generously covered with aromatic fruit sauce to enjoy the full depth of flavors in this delightful dish.

1
Preheat the oven to 180 degrees. For the sauce, divide the orange into segments, remove the membranes and seeds, cut into small pieces, and place in a saucepan. Peel the apple, remove the core, and cut into small cubes, grate the ginger finely, and add everything to the orange. Add 1 tablespoon of sugar and cinnamon, and mix.
- Oranges: 1 piece
- Apple: 1 piece
- Ginger root: to taste
- Cinnamon: to taste
- Sugar: 3 tablespoons
2
Heat to boiling, reduce heat to low and simmer for about 20 minutes, stirring until the sauce thickens slightly and the apples become very soft. The finished sauce can be blended into a puree or left chunky.
3
Put the cottage cheese in a bowl and mash it with a fork until smooth. Beat the eggs with sugar (2 tbsp) a little and add to the cottage cheese, mix. Add flour, salt, and vanilla sugar, and knead the cottage cheese mixture well.
- Cottage cheese: 500 g
- Chicken egg: 2 pieces
- Wheat flour: 5 tablespoon
- Salt: pinch
- Vanilla sugar: 1 teaspoon
4
Dust the table with flour. Dust your hands with flour so the cottage cheese doesn't stick. Shape 10 balls: first roll a ball in your hands, gently flatten it to form a disk 7 mm thick and place it on the floured work surface.
5
Heat butter in a skillet (preferably with a removable handle) over low heat. Once melted, add the cheese pancakes and fry until golden brown, flipping once. Then transfer the skillet to the oven (or place in a baking dish) and finish cooking the pancakes. This will take about 5 minutes.
- Butter: 20 g
6
Place the ready syrniki on a plate and pour orange-apple sauce over them.
