Budget pancakes with kefir are a cozy treat of Russian cuisine that originated in homes where simplicity and ingredient accessibility are valued. Tender, fluffy, with a light vanilla aroma, they have a soft texture and slightly sour taste due to the kefir. These pancakes are an excellent solution for a quick breakfast or home tea time and pair perfectly with honey, sour cream, jam, or fresh fruits. They can be made with or without oil, adjusting the browning level to your taste. It's especially nice that this recipe allows for playing with the batter's consistency to create either airy or denser pancakes depending on preferences. In a bowl, we add in order: kefir, water, sugar, vanilla sugar. Mix everything until a not very thick mass forms.
- Kefir: 200 ml
- Water: 200 ml
- Sugar: 70 g
- Vanilla sugar: 10 g

Add flour with baking powder gradually; you may need less or more flour depending on what you want from the pancakes and the frying method (see note).
- Wheat flour: 200 g
- Baking powder: 7 g

Heat the pan well until it's hot but not smoking!! Then set the electric stove to 6-7 and reduce the gas flame to medium, but closer to high.

We place the dough in the pan (with or without oil) using a small ladle or spoon, flipping them when dots appear on the pancakes (I flip them with a spatula using a spoon or fork, so the pancakes don't spread and are easier to turn).
