Rinse the quinoa.
- Quinoa: 4 tablespoons

Combine quinoa and 1.5 cups of water in a saucepan, set over medium heat, and bring to a boil. Reduce heat slightly and cook until done, about 15 minutes. Remove from heat and cool.

Pour coconut milk into another saucepan, add cooked quinoa, pieces of pineapple in syrup, and coconut flakes. Stir in maple syrup, add a pinch of cinnamon. Place the saucepan over medium heat and cook, stirring, for about 5 minutes until all the liquid evaporates. Remove from heat.

- Maple syrup: 1 tablespoon
