Portuguese Caldo Verde Soup

Caldo Verde is a hearty Portuguese soup with cabbage and mashed potatoes. The main ingredient is spicy chorizo pork sausage. Caldo Verde's flavor is similar to our pea soup: it has a rather viscous texture , and the chorizo adds a smoky flavor.

Prepare the necessary ingredients.

Chop the onion coarsely and the garlic finely.
- Onion: 500 g
- Garlic: 1 clove

Chop the potato and carrot randomly.
- Potato: 500 g
- Carrot: 1 piece

Heat olive oil in a pot.
- Olive oil: 50 ml

Fry the chopped onion and garlic clove until soft.
- Onion: 500 g

Add the chopped potatoes and carrots.
- Potato: 500 g
- Carrot: 1 piece

Add half of the chopped chorizo.
- Chorizo: 170 g

Pour everything with two liters of water, bring to a boil, and cook until the vegetables are soft for 20-30 minutes.

Blend the soup with an immersion blender, season with salt and pepper.
- Salt: to taste
- Ground black pepper: to taste

Add thinly sliced kale and cook on low heat until the kale is ready - about 5 minutes.
- Kale: 600 g

Season the soup with vinegar and salt to taste, add pepper.
- Red wine vinegar: to taste
- Salt: to taste
- Ground black pepper: to taste

Serve the soup in a deep bowl with pieces of chorizo.
