Airy cheese pancakes made from cottage cheese are a delicate treat of Russian cuisine that combines simplicity of preparation with rich flavor. Their origin dates back centuries when cottage cheese was a staple in peasant diets. These pancakes have a soft, airy texture due to the addition of baking powder and soda, while the light vanilla sweetness makes them particularly appetizing. Preparation requires minimal effort: the dough is mixed from cottage cheese, eggs, flour, and spices and then fried until golden brown. The taste is tender and creamy with a hint of vanilla. They are served with sour cream, jam or honey, creating an ideal morning treat or cozy home dessert. A wonderful choice for those who appreciate traditional yet refined dishes!

1
Mash the cottage cheese, add salt, sugar, and eggs, and mix well. Add a pinch of baking soda, baking powder, and vanilla to the flour and mix everything. Combine the flour with the cottage cheese. Knead the dough. It should be soft but not liquid — it will stick to your hands.
- Cottage cheese: 250 g
- Salt: pinch
- Sugar: 0.5 glass
- Chicken egg: 2 pieces
- Wheat flour: 0.5 glass
- Soda: pinch
- Baking powder: 1 teaspoon
- Vanillin: 1 teaspoon
2
Before you start making syrniki, dust your hands with flour or sprinkle the dough with a small amount of flour, making it easier to work with. The process is not very convenient, but necessary. If you add too much flour to the dough, the syrniki will turn out dense and tasteless.
- Wheat flour: 0.5 glass
3
Shape the flatbreads (not completely flat) and fry in a pan over medium heat.

When the pancakes are fried on one side, flip them. During frying, they will rise, and although the finished pancakes will slightly deflate, they will be very tasty, tender, and have a flavor of cottage cheese rather than flour.
