Syrniki with raisins are a delicate treat from Slavic cuisine, loved by many generations. Their roots trace back to traditional dishes made from cottage cheese, which was considered an important part of the diet. These golden, soft pancakes with a gentle sweet-sour note of cheese, light vanilla sweetness of sugar, and a pleasant surprise in the form of raisins create a harmony of flavors. When fried, they acquire a crispy golden crust while remaining airy and tender inside. Syrniki pair perfectly with sour cream, jam or honey, making breakfast cozy and warm. They are convenient to serve as a dessert or nutritious snack that delights loved ones. The simplicity of preparation and rich flavor have made syrniki one of the most beloved dishes in European cuisine.

The cottage cheese should not be too fatty or liquid. If the cottage cheese is too dry, add a spoonful of sour cream. In a bowl, mix cottage cheese, sugar (don't add too much sugar, as the syrniki will burn while frying), raisins, salt, a pinch of baking soda, and 2-3 tablespoons of flour. To determine the amount of flour, a little practice is needed. Start with 2 tablespoons of flour and knead everything. The dough should be soft and not stick to your hands.
- Cottage cheese crumbly: 500 g
