Break the chocolate into small pieces and put it in a small saucepan with cream and sugar. Place on medium heat and, stirring carefully without boiling, wait for the sugar to dissolve completely and the chocolate to melt.
- Dark chocolate: 100 g
- Cream: 0.5 glass
- Sugar: 0.5 glass

Lightly beat the eggs with a fork, combine with half of the chocolate-cream mixture, and mix thoroughly.

In a small pan (10 cm in diameter) over medium heat, melt 1 tablespoon of butter. When the foam disappears, pour a quarter of the egg mixture into the pan. Periodically gently push the edges of the omelet towards the center of the pan. When the omelet is ready, lift one edge with a spatula, fold it in half, and place it on a plate. Make 3 more omelets in the same way. To keep the omelets warm, they can be covered with foil.
