Classic syrniki are a traditional dish of Russian cuisine rooted in ancient recipes of Slavic peoples. Their base is tender cottage cheese, which gives syrniki airiness and lightness. The light sweetness from sugar harmonizes with subtle notes of vanilla if added to the dough. Fried to a golden crust, syrniki become soft inside and crispy outside, making them an ideal complement to morning tea or coffee. Traditionally served with sour cream, jam or condensed milk, they are also wonderful with honey and cinnamon. This versatile treat is suitable for breakfast as well as a cozy family dinner, creating an atmosphere of warmth and homeliness.

Prepare the ingredients.

Pass the cottage cheese through a metal sieve for airy and tender syrniki. If there's no sieve, a fine grater can be used.
- Cottage cheese 5%: 300 g

Add the yolk of 1 egg to the cottage cheese.
- Egg yolk: 1 piece

Add 30 grams of sugar (can be replaced with the same amount of powdered sugar). Slightly salt and mix.
- Sugar: 30 g
- Salt: to taste

Add the sifted flour. Mix well. It should form a uniform mass that can easily be shaped into balls.
- Wheat flour: 30 g

Form the cheese pancakes.

Pour vegetable oil into the hot pan.
- Vegetable oil: 10 ml

Fry the syrniki for 3 minutes on each side over medium heat.

After the cheese pancakes are browned, flip them again and fry each side for another 3 minutes on low heat.

Serve the syrniki hot. Optionally, serve with sour cream (jam, condensed milk).
