Mash two packs of cottage cheese in bricks of 200 grams with a fork. Add one egg and 25 grams of rice flour. Mix until homogeneous. It should result in a non-liquid, well-forming dough.
- Cottage cheese: 400 g
- Chicken egg: 1 piece
- Rice flour: 25 g

Sprinkle some rice flour on a flat plate for coating. Shape a round cheese pancake, coat it in flour, and give it the desired shape. You should get 8 cheese pancakes.

Preheat the oven to 200 degrees. Place the cheese pancakes on a silicone mat on the baking tray. Bake for 10 minutes on one side. Then flip each pancake and bake for another 5-8 minutes on the other side. The pancakes will be crispy on both sides.
