Fluffy cottage cheese casserole is a symbol of home comfort and delicate taste. This traditional Russian dessert combines the airiness of cottage cheese with the subtle sweetness of vanilla sugar and a light tang from sour cream. The recipe's origins delve deep into Russian cuisine, where cottage cheese casseroles have always been popular for their nutritional value and simplicity of preparation. The delicate consistency is achieved through careful grinding of the cottage cheese and gentle baking. Semolina adds structure, while raisins provide pleasant sweet notes. The casserole can be served with sour cream or berry sauce, enhancing its soft creamy flavor. A great option for a family breakfast or cozy tea time that warms the soul and delights the palate.

1
Mash or grind the cottage cheese to eliminate lumps and grains.
- Cottage cheese: 1 kg
2
Add the remaining ingredients (except for the raisins) and blend until smooth.
- Sugar: 0.2 kg
- Chicken egg: 4 pieces
- Semolina: 2 tablespoons
- Sour cream: 0.2 kg
- Vanilla sugar: 1 tablespoon
3
Add washed and dried raisins. Mix for even distribution.
- Raisin: 0.15 kg
4
Line the mold with parchment paper. Pour the cheese mixture into the mold. Bake for 45–60 minutes at 170 degrees. When you take it out, it will still be jelly-like. You need to remove it very carefully. It won't bake like a regular casserole, so it should be taken out of the mold only when completely cooled. Serve with sour cream or sauce.
- Sour cream: 0.2 kg
