Steamed syrniki are a delicate and airy dish of Russian cuisine, perfect for those who prefer light and healthy food. This sugar-free recipe allows you to experience the natural taste of cottage cheese, which is enriched with eggs and a small amount of flour to become soft, velvety patties. They are steamed, preserving their natural moisture and making them especially tender. Historically, syrniki were a popular dish in Russia, especially in rural homes where cottage cheese was a key ingredient. They pair perfectly with various toppings—sour cream, jam, or fresh berries—adding new flavor nuances. They can be served for breakfast or a light dinner while enjoying the softness and natural sweetness of the cottage cheese flavor.

1
Mash the cottage cheese, combine it with beaten eggs and salt, and finally mix in the flour.
- Cottage cheese: 400 g
- Chicken egg: 2 pieces
- Salt: pinch
- Wheat flour: 2 tablespoons
2
Prepare a container in the steamer (optionally grease with oil).
3
Prepare a container with water for wetting hands.
4
Make patties from the cottage cheese mass and slightly compress them, place in a mold, and leave over boiling water for 20 minutes. Then remove the container from the pot (steamer), let it cool slightly (the syrniki will seem undercooked as they will be very soft), after about 5-10 minutes they can be served; the shape will hold. Serve with your favorite topping — sour cream, cherry jam, etc.
