Vareniki with cottage cheese by Ilya Kazakov

Mix flour and salt, then add an egg, sour cream, and pour in 130 ml of water. Knead the dough in a gastro container and let it rest for about half an hour to an hour at room temperature.
- Wheat flour: 440 g
- Salt: 15 g
- Chicken egg: 1 piece
- Sour cream: 100 g
- Soda: 1 g

While the dough rests, prepare the filling. You need to take cottage cheese, sugar, egg yolk, vanilla sugar, baking soda, and cream. Mix all the ingredients.
- Cottage cheese 5%: 350 g
- Sugar: 40 g
- Egg yolk: 1 piece
- Vanilla sugar: 1 g
- Soda: 1 g
- Cream 22%: 22 ml

Roll out the dough, sprinkling it with flour. Make circles of dough with a diameter of 5–6 centimeters. Place filling in the center of the circles (take enough filling so that the circle can easily fold in half). Pinch the edges of the dumpling. Boil in boiling water for 5 minutes.
- Wheat flour: 440 g

Serve with butter and sour cream.
