Garlic Shrimp on Skewers

Garlic shrimp skewers are the embodiment of Mediterranean cuisine, filled with the aromas of fresh herbs and spicy garlic. This recipe likely originates from traditional seaside taverns where seafood is cooked over an open flame to enhance its natural flavor. Shrimp marinated in a fragrant mix of parsley, green onions, and garlic become tender and rich. Light broiling makes them golden and slightly crispy on the outside while keeping them juicy inside. The dish is perfect for a light dinner or a festive table. It should be served immediately while the shrimp are hot, with a glass of white wine or fresh lemon to add brightness to the flavor.

1
Place the rack at the top level of the oven, about 15 cm from the broiler. Line the baking dish with foil and cover it with a special flat lid with holes. Turn on the broiler.
2
Clean the shrimp, leaving the tail and removing the intestinal vein.
