Thaw the puff pastry, lightly beat the egg.
- Puff pastry: 245 g

On a floured surface, roll out the dough into a square piece measuring 30x30 cm. Use a round plate and knife to cut out a circle from the dough with a diameter of about 22 cm. Lightly brush the edges of the dough with egg. Place brie in the center of the circle and wrap it like a pouch — for this, fold the edges of the dough over to the center. Then lift the tips of the dough slightly upwards to create a small indentation in the center. Brush the dough again with beaten egg. Place on a parchment-lined baking sheet and freeze for 20 minutes.

Preheat the oven to 220 degrees. Bake the cheese on the middle rack until the dough is a deep golden brown, about 20-25 minutes.
