In a medium bowl, whisk egg whites and water with salt. Add nuts and mix slightly to coat them with the mixture. Transfer to a strainer for 5 minutes to let the nuts dry a bit.

After 25 minutes, swap the racks to ensure the nuts bake evenly. Then bake for another 25 minutes until the nuts are dry and crispy. Remove from the oven and let cool completely, which will take about 30 minutes.
