Thaw the dough. Preheat the oven to 180°C.

Clean the garlic. Pour milk and cream into a small pot and bring to a boil.
- Milk: 120 ml
- Cream 30%: 120 ml

Mix the yolk with flour and a pinch of salt, add some hot milk with cream and stir.
- Egg yolk: 2 pieces
- Wheat flour: 2 tablespoons

Pour the yolk mixture into a pot with milk and, stirring continuously, heat the sauce over low heat until it thickens. Remove the sauce from the heat, continuing to stir to prevent it from burning and turning into an omelet.

Grate the cheese on a fine grater, add it to the sauce, and mix everything thoroughly.
- Cheese: 50 g

Carefully roll out the dough and cut circles to fit the size of the molds.

Place the dough circles in the molds.

Peel the onion and cut it into small wedges.
- Sweet red onion: 1 piece

Combine olive oil with balsamic vinegar, season with salt and pepper, and mix.

In each mold, place 1 tablespoon of cheese-egg sauce, add ham, olives, a slice of onion, and a little capers.
