Heat olive oil in a pan and sauté finely chopped onion in it. Without turning off the heat, add minced garlic and herbs. Fry until a light aroma appears. Then add chopped mushrooms, reduce the heat to minimum, and cover the pan with a lid. The mushrooms should release their juice.

Open the lid and fry everything over medium heat until the juice is absorbed back. Remove from heat and let it cool well. Add a well-beaten egg, salt, spices, and sprinkle in flour. I made it half with rye flour, it turned out a bit unusual, but I liked the taste.

'The dough,' as this mass can be called, should be very thick and easily scooped with a spoon. Place it in small patties on a greased baking sheet and send the pancakes to the oven. Bake at 180-200 degrees for about 10 minutes on each side.
