Rinse the arugula well and let the water drain.

Slice the onion into half rings. Cut the bell pepper into strips. Chop the hot chili pepper after removing the partitions and seeds. Crush the garlic cloves with the side of a knife, then chop them.

Heat oil in a pan. Sauté onion, chili pepper, and bell pepper. Add garlic. Then add young spinach and sauté for a couple of minutes until partially cooked. If using frozen spinach, increase the cooking time.

Next, we add arugula, tearing it by hand. Gently mix and let it warm in the pan, but not more.
