Odessa-style draniki are a delicious dish of Ukrainian cuisine that combines the tenderness of potatoes with the spiciness of onions. Their roots trace back to traditional Eastern European recipes where potato pancakes served as a hearty and affordable treat. In the Odessa version, the addition of sour cream and egg yolks gives the batter a special softness, while flour and baking soda ensure an airy structure. Fried to a golden crust, these draniki have a crispy shell and rich flavor. They pair perfectly with sour cream, enhancing the creamy texture of the dish. Served as a standalone dish or as a side, they adorn the table with warmth and coziness. Odessa-style draniki are not just food but part of a gastronomic culture that brings people together at one table.
