Take 4 large, not too soft peaches. Cut them in half and remove the pit.

Grill them on a preheated grill pan or rack for 2-3 minutes skin side up, and 1 minute skin side down.

Cool it down, remove the skin if it comes off easily, and cut into cubes about 1 cm.

Cut the tomatoes into cubes of the same size. It's better to choose a less watery variety that releases less juice. If desired, you can remove the seeds and juice to make the salsa less liquid.

Finely chop the red onion.

Grate the lime peel and squeeze out the juice.

Chop the cilantro not too finely.
- Chopped cilantro (coriander): 2 tablespoons
