Roasted chickpeas in soy glaze
4 servings
20 minutes
Fried chickpeas in soy glaze is a magnificent combination of crunchy texture and rich Eastern flavor. This recipe is inspired by Mediterranean cuisine but has hints of Asian gastronomy thanks to soy sauce and spicy chili pepper. Soaked and carefully fried chickpeas achieve amazing tenderness inside and an appetizing crispy crust outside. The glaze made from soy sauce and sugar adds a savory sweetness, creating the perfect balance of flavors. The dish is ideal as a snack or healthy treat, and chilling before serving makes the chickpeas especially crunchy. They can be used as a side dish for meat and vegetable dishes or enjoyed on their own with fresh herbs and spices.
