Airy cheese muffins on cottage cheese dough are a delicate and aromatic treat of Russian cuisine, combining the lightness of cottage cheese with the rich flavor of cheese. The origins of this recipe can be found in traditional Russian pastries, where cottage cheese has been a staple ingredient for centuries. The taste of these muffins is a balance of salty cheese notes, the spice of garlic and cumin, complemented by an airy texture. Their softness pairs with an appetizing golden crust, creating the perfect treat for a morning breakfast or cozy tea time. Due to their rich flavor profile, muffins can be served as a standalone dish or complemented with fresh vegetables and herbs. The simplicity of preparation makes them accessible for any occasion, whether it's an everyday snack or a treat for guests.

1
Add flour and eggs to the cottage cheese. Season with salt and pepper, add garlic, and mix. The dough should be slightly thicker than for pancakes.
- Low-fat cottage cheese: 400 g
- Rye flour: 4 tablespoons
- Chicken egg: 2 pieces
- Salt: to taste
- Ground black pepper: to taste
- Garlic: to taste

We fill each mold like this: a little dough at the bottom, a thin layer of cheese. Then more dough, and on top another thin layer of cheese. The mold should be filled halfway (the dough will rise!). I sprinkled cumin on top and decorated it with sliced olives.
- Cheese: 100 g
- Caraway: to taste
- Olives: to taste
3
Fill in the other forms similarly.
4
Bake until golden brown (first at high temperature, then reduce).
