Wash and dry the spinach (if needed).
- Baby spinach: 50 g

Line the baking sheet with parchment paper, spreading the spinach in a single layer. Use only thick parchment paper or a Teflon baking sheet. Baking paper or foil won't work, making it hard to separate the chips.

Season with salt (don't overdo it), pepper, dried herbs, and garlic powder to taste.
