Make a marinade. Mix apple juice, salt, sugar, coriander seeds, star anise, and pepper in a pot, bring to a boil, and reduce by half. Add cream, mix, and cool.
- Apple juice: 150 ml
- Salt: to taste
- Sugar: to taste
- Black peppercorns: 2 tablespoons
- Anise (star anise): 5 piece
- Cream 35%: 75 ml

Pierce the breast with a tenderizer, place in marinade, and leave in the refrigerator overnight.
- Turkey breast: 1 kg

Mix all the paprika and salt in a bag. Pat the chicken breast dry with a paper towel, coat with vegetable oil, place in the bag, and coat with spices. Refrigerate for an hour.
- Sweet paprika: 50 g
