Quesadilla with spicy lamb, vegetables, and cheese is a vibrant and aromatic dish of Mexican cuisine that embodies a passion for rich flavors. First, we prepare minced meat from lamb by cutting the meat and 1 large onion into small and large pieces. We fry the onion in butter and pass it through a meat grinder along with the meat, without trimming the fat, and add 3 cloves of garlic. Next, we extract the seeds from the cardamom pods.
- Lamb fillet: 400 g
- Onion: 3 pieces

In a mortar, we crush cardamom seeds, cloves, and cumin seeds, add ground cinnamon and garam masala spice mix, mix everything, and add it to the minced lamb. Season the minced meat with salt and pepper to taste. Dice tomatoes, peppers, and onions into small cubes, finely chop chili and garlic. Then, sauté the vegetables in olive oil, previously drizzled with lime juice. In a separate pan, fry the minced meat in a mixture of butter and olive oil.

We heat the grill pan. On half of the flatbread, we place grated cheese, chopped cilantro, then minced meat, vegetables, more cilantro, and cheese, cover with the other half of the flatbread, and fry on both sides for 2-3 minutes. We cut the finished flatbreads into small triangles.
