Pappa al pomodoro with basil

What to do if you have leftover bread from yesterday? The Italians solve the problem elegantly: they make pappa al pomodoro from it. The bread is poured with vegetable broth with mashed tomatoes and simmered until it completely dissolves. The result can be eaten as a separate dish, and as a dressing for pasta, and as a spread. Our version is with basil.
