Hot Spinach and Mozzarella Dip

Preheat the oven to 220 degrees.

In a pot, heat olive oil and add finely chopped onion and minced garlic. Sauté for 5-8 minutes, stirring.
- Extra virgin olive oil: 2 teaspoons
- Onion: 1 head
- Garlic: 2 cloves

Then add finely chopped spinach and cook for 5-8 minutes until soft. Then transfer to a colander and let excess liquid drain, gently squeezing.
- Fresh spinach leaves: 35 g

In the same pot, heat the milk over high heat. Then add the ricotta and stir until smooth, about 3 minutes. Add the spinach, a bit of Worcestershire sauce, and Tabasco, and 1/4 cup of finely chopped mozzarella. Mix well. Season with salt and pepper.
- Milk: 0.5 glass
- Ricotta cheese: 170 g
- Fresh spinach leaves: 35 g
- Worcestershire sauce: to taste

- Mozzarella cheese: 190 g
- Coarse salt: to taste
- Freshly ground black pepper: to taste

Place the mixture in a greased pan and sprinkle with the remaining finely chopped mozzarella.
