Place the cranberries in a saucepan, sprinkle with sugar, add a good pinch of salt, pour in a glass of water, and set over low heat. Cook, stirring, for about twenty minutes until most of the berries burst.

Cut the celery stalks, arrange them on plates, and pour cranberry sauce over them. Sprinkle halves of roasted almonds on top — for better aroma and crunch, it’s best to roast them shortly before. If they are on the stalks, sprinkle finely chopped celery leaves on top.
