Mix mustard, honey, soy sauce, and sesame oil. Whisking vigorously, gradually add olive oil and whip the resulting sauce to an emulsion consistency.

Clean the shrimp, leaving the head and tail. Bring the fish broth (made from fish bones with added fennel or dill, onion, carrot, and celery) to a boil, add the shrimp, and immediately remove from heat. The shrimp should not be boiled, just steamed, so fresh ones need only one minute in the broth, while frozen ones need three to five minutes.

Chop a piece of ginger.

Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon. Cut into large cubes.

Put avocado in a bowl, sprinkle with vegetables, and dress with sauce. Mix well. Serve topped with shrimp. You can also drizzle the shrimp with sauce and sprinkle with sesame seeds.
