Dissolve the yeast, add 1 spoon of sugar and 2 spoons of milk.
- Dry yeast: 11 g
- Sugar: 1 tablespoon
- Milk: 2 tablespoons

Pour flour onto a large flat dish, make a well in the center, and add 1 egg, dissolved yeast, butter, and milk.
- Wheat flour: 1 kg
- Chicken egg: 2 pieces

Knead the dough until it stops sticking to your hands.

Grate suluguni on a coarse grater for the filling.

Cut a piece of dough (about 250 g) and roll it into a round shape.

The thickness of the dough after rolling should not exceed 0.5 cm.

Place suluguni in the center of the flatbread (the filling should weigh about 250g, equal to the dough).

Gather the edges of the dough to the center and seal them tightly (the filling should be in the middle).

Turn the flatbread seam side down and roll it out thinly with a rolling pin.

Make a small hole in the middle: it is necessary to let the air out so that the khachapuri does not puff up while frying.

Grease the khachapuri with a pre-prepared mixture of egg yolk and sour cream.
