Battered mushrooms are a classic dish of Russian cuisine that perfectly combines a crispy texture and delicate mushroom flavor. Historically, it originated as a way to make simple mushrooms more filling and appetizing. The batter made from flour, eggs, salt, sugar, and black pepper gives the mushrooms lightness and a golden crust. Soaking them in ice water before frying gives the mushrooms an especially crispy texture. This dish is often served as an appetizer or side to main meat and vegetable dishes. Battered mushrooms are good both hot and cold, complemented by various sauces like garlic or sour cream. Their rich, slightly sweet flavor with a spicy hint of black pepper makes them a favorite for cozy home evenings.
