Pancakes with ham and mushrooms are an exquisite combination of Russian culinary tradition and rich flavor nuances. The airy kefir-based dough gives the pancakes tenderness, while the filling of sautéed mushrooms, ham, and melted cheddar cheese reveals a rich, slightly spicy taste. This recipe is especially good for a hearty breakfast or cozy dinner. In Russia, pancakes are considered a symbol of hospitality and are often made during Maslenitsa to signify the arrival of spring.
