Roasted garlic dip is a vibrant representative of Greek cuisine that captivates with its rich flavor and creamy texture. Roasted garlic takes on a sweet, nutty note, losing its sharpness, while the addition of yogurt and mayonnaise makes the sauce velvety and balanced. Mustard adds a spicy touch, creating a perfect complement to crispy bread or pita. Greeks have used garlic in their dishes for centuries, appreciating its aroma and healing properties. This dip is not just an appetizer but an embodiment of Mediterranean culinary traditions where simplicity and natural ingredients blend with refined taste.

1
Preheat the oven to 200 degrees. Divide the garlic heads into cloves, but do not peel them. Place the garlic cloves on a baking sheet and drizzle with olive oil so that all the garlic is coated. Place the baking sheet in the oven for about half an hour. The garlic is ready when you feel it is soft when pressed with a fork. Remove the baking sheet and cool the garlic.
