Cut the bacon into slices about 3-4 mm thick.
- Salo: 10 g

Crush ginger and garlic with a chef's knife.
- Ginger: 30 g
- Garlic: 4 pieces

Send the bacon to a hot dry skillet. The heat should be above medium.

Meanwhile, slice the meat into thin slices.
- Pork ham: 300 g

Once the bottom side is browned, flip it.

After a couple of minutes, remove the fat (it will no longer be needed) and add ginger and garlic to the melted fat.

Fry on both sides until golden brown, then remove.

Put the pork in fragrant fat.

Season with sumac.
- Sumac: pinch

Add dried onion.
- Dried green onions: to taste

Once the bottom side is browned, flip it and add salt. Lower the heat slightly.
- Sea salt: to taste

Season with black pepper and chili.
