Heat 3 tablespoons of oil in a pot, add finely chopped onion, sliced carrot, and garlic cloves. Cook, stirring, for 5 minutes. Pour in the wine, add two sprigs of parsley and a bay leaf. Season with salt and pepper and cook for another 5 minutes. Then add the mushroom caps and finely chopped tomatoes and cook for another 5 minutes.

- Dry white wine: 275 ml
- Parsley: 5 stem
- Bay leaf: 1 g
- Salt: to taste
- Ground black pepper: to taste
- Fresh mushrooms: 750 g
- Tomatoes: 2 pieces

Remove the parsley, bay leaf, and garlic. Transfer the mushrooms to a serving dish, drizzle with the remaining oil, and sprinkle with the remaining finely chopped parsley. Mix well and refrigerate.
