Grilled Halloumi Cheese

Orange, cranberry, grenadine and honey are responsible for the sweet and sour berry component, and the sauce is spiced by a composition of star anise, cloves, cinnamon and pepper. Cut the cheese into 1 cm thick slices and grill in a hot skillet with oil for 1.5 minutes on each side.
- Halloumi cheese: 500 g
- Butter: 20 g

To make the sauce from sugar and water, boil the syrup, add dried apricots, spices, orange zest and juice, and cook until thickened. Then add cranberries, honey and grenadine syrup, bring to a boil, remove from heat and let steep.
- Sugar: 60 g
- Water: 50 ml
- Dried apricots: 100 g
- Carnation: 4 pieces
- Cinnamon sticks: 1 piece
- Anise (star anise): 2 pieces
- Black peppercorns: 4 pieces
- Oranges: 0.5 piece
- Cranberry: 30 g
- Honey: 20 g
- Grenadine: 20 ml
