Trout is baked with herbs and leeks in a coat of salt, which makes it very tender and juicy. You can bake other fish using the same technology, for example sea bass. The recipe was shared with us by the brand chef of the restaurants "Ryba Moya" Dmitry Pariko in .

Add 70 ml of water and the zest of one lemon to the salt.
- Sea salt: 800 g
- Water: 70 ml

Put 1/3 of the salt on the tray.

Blanch the leek and cool it in cold water. Then divide it into two parts.
- Leek: 100 g

Place one part of the leek on top of a layer of salt, then add the trout fillet. On the trout, place lemon sliced thinly.

Surround the fish with herbs: dill, parsley, thyme.

Place spinach over the herbs and cover everything with the second part of the leek to protect the trout from contact with salt. Sprinkle 2/3 of the salt on top.

Bake in the oven at 180 degrees for 17-20 minutes.
