Pepperoni French Fries

Recipe by Dmitry Chernyshov, chef at SOS. Café. The dish is based on poutine (French: poutine) — a national Quebec fast food dish consisting of French fries sprinkled with young brine cheese (cheese curds) and drizzled with a slightly sweetened garnish. It appeared in Quebec in the 1950s, and in the 2000s its popularity spread to other provinces and even countries (USA, France, Belgium). It is often served as an addition to breaded seafood and fish dishes. Spicy pepperoni sausages and tomatoes with poutine are another classic combination.

Peel the potatoes, cut them into standard sticks like for French fries. Rinse under cold running water to wash off the starch.
- Potato: 2 pieces

Dry the sliced potatoes with paper or cloth towels.

Heat the pan with vegetable oil for frying.
- Vegetable oil: 100 ml

Carefully lower the sliced potatoes into the heated oil in batches. Do not throw them in; be extremely cautious to avoid getting splashed and burned.

When a golden crust appears, flip the potatoes with a slotted spoon. Fry the potatoes for a total of 3 minutes until evenly golden and soft inside.

Chop the mozzarella finely. Separately, heat the tomato sauce in a pan and mix it with the chopped mozzarella.
- Mozzarella cheese: 120 g
- Tomato sauce: 100 g

Chop the garlic, heat it in vegetable oil, and quickly fry the thinly sliced pepperoni sausages in garlic oil.
- Garlic: 1 clove
- Vegetable oil: 100 ml
- Pepperoni: 30 g

Place the fries on a plate, drizzle with hot tomato sauce and mozzarella. Top with sausages, sprinkle with grated parmesan and fresh basil.
- Tomato sauce: 100 g

- Parmesan cheese: 10 g
- Basil: to taste
- Salt: to taste
- Ground black pepper: to taste
