Dranik with poached egg

Corn here is part of the dranik, juicy, sweet, tender. Recipe by Sergey Volkonenkov, chef of the restaurant "Voronezh".

Peel the potatoes and grate them coarsely. Squeeze the resulting potato shavings.
- Potato: 300 g

Add salt, paprika, corn, and butter to the grated potatoes. Mix all the ingredients and form 2 round draniki.
- Salt: to taste
- Paprika: to taste
- Canned corn: 70 g
- Butter: 20 g

Heat a pan with vegetable oil and fry the draniki on both sides until crispy, which will take about 5-7 minutes.
- Vegetable oil: 30 ml

To poach an egg, carefully crack it into a small bowl keeping the yolk intact, add salt and a couple of tablespoons of white vinegar. Heat water to boiling in a pot and gently slide the egg in from the bowl as close to the water surface as possible. Cook until the white is no longer transparent and fully covers the yolk. Remove the egg with a slotted spoon. Prepare a second egg in the same way.
- Chicken egg: 2 pieces

Quickly fry halved cherry tomatoes in vegetable oil.
- Vegetable oil: 30 ml
- Cherry tomatoes: 6 pieces

Place the ready draniki, poached egg, halved tomatoes on a plate and garnish with greens.
- Spinach: to taste
- Fresh rosemary: to taste
