Onions for the winter without vinegar

A recipe for those who are absolutely not satisfied with the vinegar taste in home marinades. Although vinegar plays an important role as a preservative in any preparations, you can do without it by replacing it with lemon juice. It will not be as piercing , but the sour-sweet-spicy balance of lemon, onion and sugar will give an excellent one. The main thing is to open this preparation no later than the New Year: it is stored a little less than ordinary vinegar preserves, but the ingredients are all healthy and natural without exception. The original amount of products will make about 1 liter of preparation.

Prepare all the ingredients.

Sterilize the jars and boil the lids.

Peel the onion and slice it into half rings (red and white separately).
- Red onion: 500 g
- White onion: 500 g

Layer the onions in jars (for visual effect).

Squeeze juice from lemons.
- Lemon: 2 pieces

Pour water into a saucepan, add sugar, salt, dill, and lemon juice.
- Water: 400 ml
- Sugar: 1 tablespoon
- Salt: 0.5 tablespoon
- Dried dill: 1 teaspoon

Bring the marinade to a boil and cool it to 40 degrees.

Pour the marinade into jars with onions and gently press the onions with a wooden pestle.
- Water: 400 ml

Seal the jars, turn them upside down, wrap in a blanket, and let them cool completely.
