Peel the apples.
- Apple: 2 kg

Place the peels in a wide pot for boiling jam and add 2 cups of water. Boil for 15 minutes.
- Water: 500 ml

Take the apple peel out of the water, it won't be needed anymore.

Cut the apples into cubes.

Grate the zest of 1 lemon on a fine grater, avoiding the white part: it is bitter.
- Lemon: 1 piece

Put the apples with the peel in the basin where the skins were boiled.
- Apple: 2 kg

Squeeze juice from the lemon.
- Lemon: 1 piece

Add sugar, a cinnamon stick, and lemon juice to the bowl.
- Sugar: 1 kg
- Cinnamon sticks: 1 piece

Cook on medium heat for 1 hour and 45 minutes. Stir the jam every 15 minutes.

Distribute the ready jam into jars, remove the cinnamon stick.
