Tiramisu with amaretto

A minimum of ingredients, a glass of liqueur and simple steps - this is how tiramisu is prepared at the Litro° restaurant.

Add sugar to the water, bring to a boil, and boil for 5 minutes.
- Sugar: 215 g
- Water: 50 ml

Take the yolk, whisk it, and slowly add the hot evaporated syrup while continuing to whisk actively until it cools and forms an airy mass.
- Egg yolk: 3 pieces
- Sugar: 215 g

Add mascarpone to the resulting mixture and mix thoroughly, then fold in the whipped cream and mix again. Place the resulting mixture in the refrigerator while preparing the next parts.
- Mascarpone cheese: 160 g
- Cream 33%: 250 ml

Mix espresso and liqueur, this is a bath for soaking the biscuit.
- Liquor: 250 ml

Mix, beat sugar and eggs, then add flour and mix everything. Pour into a rectangular mold, bake in the oven at 180 degrees for 14 minutes.
- Sugar: 215 g
- Chicken egg: 5 piece
- Wheat flour: 125 g

Combine the parts and prepare tiramisu: cut the cooled sponge into circles with a diameter of 10 cm, soak with coffee using a pastry brush. Spread 40 grams of mascarpone cheese mixture on top, then repeat the same to make a second layer.
- Mascarpone cheese: 160 g

Then cool in the refrigerator for 40 minutes. Before serving, sprinkle with cocoa powder and small pieces of dark chocolate.
