Berry Galette

I'm ready to admit that I've found the perfect dough recipe for myself. I think it's suitable for many types of baking. I want to try making sochniki with it. The first time I made a galette with berry filling (blueberry + cranberry), the second time I made lemon .

We make the dough. Mix flour and salt, add ricotta, and crumble everything.
- Wheat flour grade 1: 70 g
- Salt: pinch
- Ricotta cheese: 100 g

Gradually add kefir and knead the dough. Form a ball, place it in a bag or wrap it in film, and refrigerate for 30 minutes.
- Kefir 1%: 100 ml

We mix the berries with sugar and starch (if the berries are frozen, we thaw them and let the juice drain well).
- Fresh berries: 400 g
- Sugar: 0.5 glass
- Cornstarch: 1.5 tablespoon

Roll the dough into a circle on parchment to 0.3-0.5 cm.

Place the filling in the center of the dough, leaving 3 cm at the edges.

We fold the edges, leaving the center.

You can sprinkle with oatmeal and sugar on top.
- Oat flour: 90 g
- Sugar: 0.5 glass

Bake in an oven preheated to 180 degrees for 30-40 minutes.

For the lemon filling: blend one lemon, let the juice drain, and mix with sugar and starch.
